May improve heart health and cholesterol. There are some health benefits to tamarind, though one potential side effect is a laxative reaction. Turn gas to low-medium and add the rest of the ingredients (tamarind concentrate and spices). I recommend purchasing a puree, rather than the block of dried fruit pulp. In a small saucepan, add ¼ cup water and jaggery powder and turn the gas on medium heat.Within a minute or two the jaggery will begin to melt. It is pretty sour, quite fibrous but really delicious when mixed with the right ingredients. (More or less- the tamarind is quite sticky so it's hard to be exact.) Place the tamarind in a small bowl with 1 Cup of hot or warm water till the pulp has softened. If you’re using pure paste, use 3 tablespoons instead. Remove 2 Tablespoons of Tamarind paste from the tamarind brick. My version is just as flavorful, but uses simple substitutions to ensure it’s vegan-friendly: Tamarind paste - I used tamarind paste already mixed with water and no sugar added (56 tamarind).
